SUSHISAMBA Coral Gables THE WESTIN COLONNADE 180 Aragon Avenue Coral Gables, FL 33134 SUSHISAMBA Miami Beach 600 Lincoln Road Miami Beach, FL 33139 The Lead Pastry Cook will work directly under the Pastry Chef. You will be required to assist the Pastry Chef in training and monitoring the other pastry cooks. Ensuring high quality execution of recipes and plate ups. You must be able to assume the responsibilities in the absence of the pastry chef such as placing all orders, completing sanitation check lists, as well as inventory. JOB DUTIES: Follows all recipes, portion controls, and presentation specifications as set by the restaurant. Coordinates the delivery of all foods within pre-set time standards. Demonstrates product standards and recipe knowledge daily Sets up, maintains side work, and/or closes station for scheduled shift (e.g., checks and/or breaks down and cleans equipment, preps all appropriate food items, stocks all food items and smallwares, dates food items and stores according to first in first out rotation method, etc.). Prepares and plates station food items according to specifications and preset time limits. Ensures safety and sanitation standards are maintained. Properly uses personal protective equipment (e.g. glove, oven mitt, apron, etc.) Maintains a clean, neat, well-groomed appearance. Prepares and plates all station food items according to specifications Communicates any product run outs, equipment issues, and quality or service problems to the MOD immediately. Assists with the cleaning, sanitation, and organization of kitchen, coolers, and all storage areas. MINIMUM QUALIFICATIONS Fluent English speaker Valid Food Safety certification Knowledge and experience of most food sections or able to be trained up quickly. Ability to stand during an entire shift Exerting up to 25 lbs of force occasionally, and/or constantly to lift, carry, push, pull or otherwise move object Must be able to deal effectively with diverse departments and have flexibility to work in an ever-changing environment Willing to work odd and irregular hours including holidays, promotions and weekends Must be able to work independently and as part of a team. Must possess a high level of maturity, dependability, and punctuality Good personal organization High standard of personal hygiene Friendly, outgoing and flexible. Used to working in a pressured environment. Able and willing to work extra hours as business demands require.
