COMPANY Sparians is a new North Carolina based entertainment venue that is opening a 30,000 sf location based entertainment center. The center features include: 12 main bowling lanes with plush, comfortable couches and a unique audio/visual, sound & lighting presentation, 2 private suites with upscale appointments and 6 additional lanes for meeting, party and catering capabilities; and a restaurant and lounge. In all, the center will entertain up to 700 people at any given time for the general public and/or private events.
The center operates with a "guest first" philosophy and a focus on quality, cleanliness and safety. Unique to many other forms of entertainment, this smoke-free environment appeals to families, corporate entities and the local nightlife crowd.
REPORTING RELATIONSHIPS The Food & Beverage Manager will report directly to facility General Manager and will serve as an integral member of the centers executive management team. This position will maintain a close working relationship with the GM and corporate management and will provide leadership and direction for the daily and long range operations and sales of any aspect of the business involved in food service.
EDUCATION An undergraduate degree in hospitality management with an emphasis in food & beverage and/or a related discipline is desired, however, not mandatory. Additionally, any advanced education, experience, and/or competencies in culinary, food & beverage management and broader sales and marketing concepts are desirable.
PRINCIPAL FUNCTION The candidate will be responsible for managing all aspects of the food & beverage departments. Maximize the profitability of the F&B operations through the implementation of effective cost controls and supplier negotiation. Maintain consistent standards of service, ensuring guest satisfaction while creating a work environment that supports organizational values.
SPECIFIC QUALIFICATIONS The successful candidate will have a minimum of 5 years experience as a manager of a high volume food & beverage location. Ideally, experience will include hospitality management in a food & beverage setting with catering experience.
* Excellent communication and presentation skills, both written and oral. * Maintain consistencies in all aspects of the food & beverage department through maintaining strict guidance over policies and procedures as to not jeopardize the integrity of the business. * Goal oriented, self-motivated and able to work independently, but within a team environment. * Confident, competitive, thorough and tenacious attitude. * Demonstrated ability to foster and be a part of an upbeat, enthusiastic work environment in the effort to provide the absolute best guest services and promote a "guest first" attitude with all staff. * The successful candidate must have a commitment to a “hands on” management style, must intuitively understand the dynamics of building a winning food & beverage team and support staff, and nurture their growth to ensure the continued, positive growth of the business. * Ability to work nights, weekends, holidays and flexible hours as responsibilities demand. Minimum 55 hour work week. Must have a “work to get the job done” attitude. * Must be computer savy with a better than average knowledge of Microsoft Office Suite products, i.e., Outlook, Word, Excel, PowerPoint, etc. * Responsible for all of the administrative and human-resource functions of running the F&B side of the business. * Maintain preventative maintenance programs on all kitchen equipment to reduce the risk of liability on the company’s part and any down time that would reflect negatively on reveues and guest perception. * Direct and maintain a quality food & beverage operation concentrating on portion control, food cost, inventory control and product presentation. * Coordinate catering services with the sales director and general manager for all special events as to maintain the highest level of production, performance and guest satisfaction. * Monitor and manage the local and state laws with regard to alcohol service and sanitation requirements. * Must understand the area demographics to create a changing menu and use the information to drive sales. * Meet and exceed monthly, quarterly and yearly sales and cost of goods targets.
Qualified applicants will be required to demonstrate their analytical skill set by creating and evaluating an excel sheet given a specific set of data.
COMPENSATION The compensation package will include a competitive base salary. In addition, the individual will participate in the company’s MBO-MIC bonus plan, be entitled to 2 weeks paid vacation after one year of continuous employment, participation in the company health insurance after 90-days, and attend food & beverage related seminars.
